Ingredients

Scale

Peppers & Vegetables

  • 10 hot peppers (habaneros, scotch bonnet peppers, Thai chili, etc.)
  • 1 medium onion
  • 4 cloves garlic
  • 13 Roma tomatoes (adjust the amount to taste)

Herbs & Seasoning

  • 2 tablespoons (20g) bouillon powder (or Maggi)
  • 2 basil leaves
  • 2 tablespoons (7-8g) parsley
  • salt (to taste)

Oil

  • ½1 cup (118-236ml) vegetable oil

Instructions

  1. Prepare Ingredients: Coarsely chop the Roma tomatoes and onion, and remove the stems from the hot peppers.
  2. Blend Sauce: In a food processor, combine the chopped tomatoes, onions, garlic, hot peppers, parsley, basil leaves, and bouillon powder. Add enough vegetable oil to create a thick puree and blend until smooth.
  3. Simmer Sauce: Transfer the blended pepper mixture to a small saucepan and bring it to a boil over medium heat. Reduce the heat to low and gently simmer the sauce for about 15 minutes, stirring frequently to prevent burning. Taste and adjust salt as needed.
  4. Cool and Store: Allow the sauce to cool completely before transferring it to a mason jar or any airtight container. For extended shelf life, fully cover the top of the sauce with a layer of vegetable oil. Store the sauce in the refrigerator for up to one week.

Notes

  • Adjust the number of tomatoes to balance the heat and acidity of the sauce according to your preference.
  • The choice of hot peppers will influence the heat level; choose milder or hotter varieties depending on your tolerance.
  • Always stir the sauce frequently while simmering to avoid burning and sticking to the pan.
  • Ensure the sauce is fully covered with oil to preserve it longer when refrigerated.
