Instructions

  1. Prepare Pan: Preheat oven to 350°F (175°C). Grease and flour an 8 x 5 inch loaf pan or line it with parchment paper to prevent sticking. Set aside.
  2. Mix Cinnamon Sugar: In a small bowl, whisk together the brown sugar and ground cinnamon until well combined. Set aside for layering.
  3. Combine Wet Ingredients: In a large mixing bowl, whisk the eggs and granulated sugar together until the mixture is smooth and well combined. Stir in the melted butter and vanilla extract until fully incorporated.
  4. Add Dry Ingredients: Sift together the flour, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients and stir gently until just combined, creating a thick batter.
  5. Fold in Apples: Carefully fold the chopped apples into the batter, distributing them evenly without overmixing.
  6. Layer Batter and Cinnamon Sugar: Pour half of the batter into the prepared loaf pan. Evenly sprinkle about three-quarters of the cinnamon sugar mixture over this layer. Then carefully spread the remaining batter on top. Sprinkle the remaining cinnamon sugar over the top layer and gently swirl it into the batter using a knife or spoon to create a marbled effect.

Bake the Bread: Place the loaf pan in the preheated oven and bake for 35 to 45 minutes, until the top is golden and a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the bread begins to brown too quickly, tent loosely with foil for the last 10 to 15 minutes to prevent burning.
