These Apple Cheesecake Breakfast Quesadillas are a delightful twist on the traditional morning meal. Creamy cheesecake filling with a hint of cinnamon, paired with thinly sliced apples, all enclosed in a warm tortilla and finished with a sweet cinnamon sugar touch.

Tortillas:

  • 4 large burrito sized flour tortillas

Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 2 tbsp Imperial granulated sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Apples:

  • 2 medium apples, thinly sliced

Additional:

  • 4 tbsp butter
  • Melted butter
  • Mixture of cinnamon & sugar

Instructions

  1. Cheesecake Filling: In the bowl of a stand mixer, combine cream cheese, sugar, vanilla, and cinnamon. Whip until smooth.
  2. Assembly: Spread 1/4 of the mixture onto one side of a tortilla. Layer apples on one half. Fold over.
  3. Cooking: Melt 1 tbsp butter in a skillet. Cook quesadilla until golden. Flip and repeat. Do the same for remaining quesadillas.
  4. Finishing Touch: Brush cooked quesadillas with melted butter, sprinkle with cinnamon sugar on both sides.
  5. Serve: Cut quesadillas into wedges using a pizza cutter and serve hot.

  • You can customize by adding nuts or a drizzle of caramel sauce.
