Tortillas:
- 4 large burrito sized flour tortillas
Cheesecake Filling:
- 8 oz cream cheese, softened
- 2 tbsp Imperial granulated sugar
- 1/2 tsp vanilla extract
- 1/4 tsp ground cinnamon
Apples:
- 2 medium apples, thinly sliced
Additional:
- 4 tbsp butter
- Melted butter
- Mixture of cinnamon & sugar
- Cheesecake Filling: In the bowl of a stand mixer, combine cream cheese, sugar, vanilla, and cinnamon. Whip until smooth.
- Assembly: Spread 1/4 of the mixture onto one side of a tortilla. Layer apples on one half. Fold over.
- Cooking: Melt 1 tbsp butter in a skillet. Cook quesadilla until golden. Flip and repeat. Do the same for remaining quesadillas.
- Finishing Touch: Brush cooked quesadillas with melted butter, sprinkle with cinnamon sugar on both sides.
- Serve: Cut quesadillas into wedges using a pizza cutter and serve hot.
