These Apple Fritter Bites are a delicious bite-sized twist on the classic apple fritter, perfect for snacking or dessert. Made with diced apples and cinnamon, these fritters are baked until golden and then topped with a sweet apple cider glaze.

Dough:

  • Nonstick cooking spray
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 2 tsp ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced Honeycrisp or Gala apples (about 2 medium apples)

Apple Cider Glaze:

  • 2 cups powdered sugar
  • 1/3 cup + 2 tbsp apple cider or juice

Instructions

  1. Preheat oven and prepare baking sheet: Preheat oven to 400°F and grease a baking sheet with nonstick spray.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. Combine wet ingredients: In a large bowl, whisk melted butter and sugar, then stir in the egg, vanilla, and applesauce until smooth.
  4. Combine dry and wet ingredients: Add the dry ingredients to the wet ingredients and stir until combined. Gently fold in the diced apples.
  5. Bake the fritter bites: Scoop out 1 tbsp portions of batter onto the prepared baking sheet. Bake for 10 minutes.
  6. Make the glaze: Whisk together powdered sugar and apple cider/juice until thin and pourable.
  7. Glaze and broil: Brush glaze over warm fritters and broil for 2-4 minutes until caramelized.
  8. Finish with glaze: Brush remaining glaze over fritters and let sit for 15 minutes before serving.

Notes

  • For best results, use fresh apples for a more flavorful fritter.
  • Ensure the glaze is thin enough to easily brush over the fritters.
  • Be careful when broiling to prevent burning the glaze.
