For the Apple Fritter Bites:

- 1 1/2 cups all-purpose flour

- 1 1/2 cups finely diced Honeycrisp or Gala apples (about 2 medium apples)
For the Apple Cider Glaze:
- 2 cups powdered sugar
- 1/3 cup + 2 tbsp apple cider or apple juice
- Prepare Oven and Baking Sheet: Preheat your oven to 400°F (200°C). Generously grease a baking sheet with nonstick cooking spray to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, salt, and ground cinnamon until evenly combined.
- Combine Wet Ingredients: In a large bowl, whisk the melted butter and granulated sugar together until smooth. Whisk in the egg, vanilla extract, and applesauce until the mixture is well combined and creamy.
- Combine Wet and Dry Mixtures: Add the dry ingredients to the wet mixture. Stir gently with a spatula or wooden spoon until the batter is just combined—avoid overmixing for tender bites. Fold in the finely diced apples evenly.
- Shape Bites: Scoop out 1 tablespoon portions of the batter and drop them a few inches apart onto the prepared baking sheet.
