Bread:

  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 apples, peeled, cored, and diced
  • 2/3 cup granulated sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk

Glaze:

  • 1/2 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Prepare Oven and Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Mix Brown Sugar and Cinnamon: In a small bowl, combine the brown sugar and cinnamon. Toss the diced apples in a small amount of this mixture to coat them.
  3. Cream Sugar and Butter: In a medium bowl, beat the granulated sugar and butter until light and fluffy. Add eggs and vanilla, mixing well.
  4. Combine Dry Ingredients: Whisk flour and baking powder together and add to the creamed mixture alternately with milk.
  5. Layer the Batter: Pour half of the batter into the prepared pan. Top with half of the apple mixture, then half of the brown sugar-cinnamon mixture. Repeat with the remaining batter and apple mixture, finishing with a sprinkle of the sugar-cinnamon mix.
  6. Bake: Place in the oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool: Let the bread cool in the pan on a wire rack for 15 minutes, then remove from the pan and allow to cool completely.
  8. Glaze and Serve: Mix the powdered sugar and milk to make the glaze; drizzle over the cooled bread.
