For the Apple Filling

  • 1/2 teaspoon ground cinnamon

  • 2 unbaked pie crusts, rolled into two 12-inch circles
  • 1 egg
  • 2 teaspoons milk

Instructions

  1. Prepare the Filling: Melt butter in a large skillet over medium heat for about 1 minute until barely golden. Add the diced apples, sugar, brown sugar, and salt. Cook stirring often for about 5 minutes until the apples soften and sugars dissolve. Stir in water, cinnamon, and nutmeg; cook for an additional 4 minutes. Transfer the filling onto a plate and refrigerate to cool completely.
  2. Cut Dough Circles: Using the lid of a small pot (about 6 inches in diameter), cut out 6 circles from the rolled pie crusts.
  3. Mix Egg Wash: Whisk together the egg and milk to create the egg wash for sealing and glazing the pies.
  4. Assemble Pies: Spoon about 1/4 cup of cooled apple filling onto each dough circle, placing it slightly off center. Brush the outer edge of each circle with the egg wash. Fold the dough over the filling to form a half-moon shape and seal the edges by pressing with your finger. For a decorative edge, press around the sealed edge with the tines of a fork. Make three slits in the top of each pie to allow steam to escape. Brush the tops of the pies with the remaining egg wash.
  5. Cook in Air Fryer: Place 2 or 3 pies in the air fryer basket at a time. Cook at 350°F for 12 minutes until golden brown and bubbly. Repeat with the remaining pies.
  6. Or Bake in Oven: Preheat the oven to 400°F and line a baking sheet with parchment paper. Transfer the pies to the baking sheet and bake for approximately 15 minutes until golden and the filling is bubbling.
