Egg Mixture:

  • 8 eggs
  • 1/4 cup milk
  • kosher salt
  • Freshly ground black pepper
  • 2 Tbsp. finely chopped chives

Bagel Sliders:

  • 8 slices bacon
  • 10 mini bagels, halved
  • 4 Tbsp. cream cheese, softened
  • 1 1/2 cups shredded Cheddar cheese
  • 3 Tbsp. butter, melted
  • 2 tsp. dried onion
  • 2 tsp. granulated garlic
  • 2 tsp. sesame seeds
  • 2 tsp. poppy seeds

Instructions

  1. Preheat oven and prepare baking dish: Preheat oven to 350° and grease a large baking dish with cooking spray. Beat eggs and milk in a bowl until frothy.
  2. Cook the bacon: Cook bacon in a skillet until crispy. Drain on paper towels and reserve some bacon fat in the skillet.
  3. Prepare the egg mixture: Pour the egg mixture into the skillet, cook until nearly set, season with salt, pepper, and chives, then remove from heat.
  4. Assemble the sliders: Spread cream cheese on bagel bottoms in the baking dish, top with egg mixture, bacon, cheddar, and bagel tops. Brush with melted butter and sprinkle with seasonings.
  5. Bake and serve: Bake for about 10 minutes until toasty and cheese is melted. Serve warm.
