Ingredients

Scale

Ingredients

  • 2 tablespoons butter
  • 4 tablespoons heavy cream
  • 1/4 cup fresh goat cheese
  • 1/4 cup grated Parmesan cheese
  • 4 tablespoons fresh thyme, rosemary, and parsley, finely chopped
  • 2 large eggs

Instructions

  1. Preheat the oven: Set your oven to the broiler setting on high to prepare for baking the eggs.
  2. Melt butter and cream: In a ramekin, combine the heavy cream and butter. Place it in the oven for 2 minutes until the butter is melted and fully mixed with the cream.
  3. Add cheeses: Drizzle half of the goat cheese and half of the grated Parmesan cheese over the buttery cream mixture in the ramekin.
  4. Add eggs and herbs: Carefully break the eggs into the ramekin, ensuring the yolks stay intact. Sprinkle half of the chopped fresh herbs over the eggs, then drizzle the remaining goat cheese and Parmesan on top.
  5. Bake the eggs: Place the ramekin back in the oven under the broiler and bake for about 8 minutes, or until the egg yolks have cooked to your liking.
  6. Finish and serve: Remove the ramekin carefully, as it will be very hot. Sprinkle the remaining fresh herbs on top. Allow to cool slightly before serving, preferably on a wooden board or heat-proof plate.

Notes

  • Be cautious when handling the hot ramekin after baking; use oven mitts and serve on a heat-resistant surface.
  • Customize the herbs to your preference; basil or chives also work well.
  • For a richer flavor, try substituting half-and-half for the heavy cream.
  • Keep an eye on the eggs during broiling to avoid overcooking the yolks.
