Ingredients

Shredded Zucchini:

2 cups shredded zucchini (about 1½ medium zucchini)

All-Purpose Flour:

2 cups (256 g)

Baking Soda:

½ teaspoon

Baking Powder:

1 teaspoon

Ground Cinnamon:

2 teaspoons

Salt:

½ teaspoon

Granulated Sugar:

1 cup (200 g)

Eggs:

2, room temperature

Vegetable Oil:

1 cup (218 g)

Vanilla Extract:

2 teaspoons

Ripe Bananas (Mashed):

2 bananas (about 1 cup mashed)

Instructions

  1. Preheat Oven: Preheat oven to 350°F and prepare a muffin pan with liners.
  2. Prepare Zucchini: Rinse, trim, and shred zucchini. Squeeze out excess water and set aside.
  3. Mix Dry Ingredients: In a large bowl, sift together flour, baking soda, baking powder, cinnamon, and salt.
  4. Prepare Wet Ingredients: In another bowl, mash bananas and add sugar, eggs, oil, and vanilla. Stir until combined.
  5. Combine Ingredients: Add dry ingredients to wet ingredients and stir until just combined. Fold in shredded zucchini.
  6. Fill Muffin Liners: Distribute batter evenly into cupcake liners.
  7. Bake: Bake for 22-26 minutes until a toothpick inserted comes out clean.
