Cream
- 200 g mascarpone (room temperature)
- 16 g whipping cream stabilizer
- 8 g vanilla sugar
- 40 g granulated sugar
- 300 ml heavy cream (cold)
Extra
- Biscoff cookies (crumbled for layering)
- Biscoff spread (for layering and topping)
Base & Garnish
- Ladyfingers (cut into thirds and smaller pieces)
- Strawberries (optional, for layering and garnish)
- Biscoff cookies (crumbs, for garnish)
- Prepare the Cream: In a deep bowl, combine mascarpone, whipping cream stabilizer, vanilla sugar, and granulated sugar. Mix for 1 minute to combine. Gradually add heavy cream while continuing to mix until stiff peaks form.
- Prepare the Ladyfinger Base: Cut ladyfingers into thirds. Take one piece and cut it further into three smaller pieces to create a base layer for the dessert.
- Assemble the Base: Line a baking ring with plastic wrap and place it on a plate. Line the sides of the ring with whole ladyfingers and fill the bottom with the smaller ladyfinger pieces.
- Layer the Dessert: Pipe a layer of the prepared cream onto the ladyfinger base, then add a layer of Biscoff spread, sprinkle Biscoff cookie crumbs, and add another cream layer. Take care not to overfill as there will be a topping layer of Biscoff spread.
- Chill the Dessert: Place the assembled dessert in the refrigerator and let it set for at least 4-5 hours, preferably overnight for best texture and flavor melding.
- Prepare the Topping: Warm Biscoff spread gently in a saucepan over low heat or briefly melt it in a microwave until liquid.
- Finish and Garnish: Pipe a thin layer of warm Biscoff spread over the chilled dessert. Garnish with Biscoff lines, halved strawberries, and Biscoff cookie crumbs as desired.
Notes
- Ensure mascarpone is at room temperature and heavy cream is cold before mixing.
- Allow the dessert to chill overnight for best texture and flavor blending.
- Dip ladyfingers quickly in milk, coffee, or milk mixed with Biscoff spread to soften and add flavor without sogginess.
- Add finely chopped strawberries between cream and Biscoff spread layers for freshness and color contrast.
- Vanilla sugar can be substituted with vanilla extract for a smoother flavor.
- Mascarpone can be replaced with cream cheese for a variation in texture and taste.
- Consider adding a layer of salted caramel sauce for a sweet and salty twist.
