Kielbasa:
- 1 lb of kielbasa sausage, sliced
Tortellini:
- 1 lb of cheese tortellini (fresh or frozen)
Vegetables:
- 2 cups of bell peppers, diced
- 1 cup of red onion, diced
- 3 cloves of garlic, minced
- 1 tablespoon of olive oil
Seasonings:
- 1 teaspoon of Italian seasoning
- ½ teaspoon of smoked paprika
- Salt and pepper to taste
Garnish and Serving:
- Fresh parsley for garnish
- Grated Parmesan cheese for serving (optional)
- Preheat the Grill: Turn on your Blackstone grill to medium-high heat and let it preheat for about 5 minutes.
- Boil Tortellini: Bring a pot of salted water to a boil. Add the tortellini and cook according to package instructions, usually around 3-5 minutes. Drain and set aside.
- Prep Vegetables: In a mixing bowl, combine the diced bell peppers, red onion, minced garlic, olive oil, Italian seasoning, smoked paprika, salt, and pepper. Toss until the vegetables are well coated.
- Cook the Kielbasa: Add the sliced kielbasa directly to the preheated grill. Sear for about 3-4 minutes until browned and slightly crispy.
- Add Vegetables: Push the kielbasa to one side of the grill and add the seasoned vegetables to the other side. Grill for another 5-7 minutes, stirring occasionally until the vegetables are tender and slightly charred.
- Combine Ingredients: Add the drained tortellini to the grill. Gently toss everything together to combine and heat through, about 2-3 minutes.
- Check Seasoning: Taste and adjust seasoning as needed.
- Garnish and Serve: Remove from the grill, sprinkle with fresh parsley, and serve immediately. Optionally, top with grated Parmesan cheese.
