Main Ingredients:
Sauce Mixture:
- 1 (10 ounce) can of cream of chicken soup
- 1 cup mayonnaise or miracle whip
- 1/4 cup of butter, melted
- 2 large eggs, slightly beaten
- 1/2 medium yellow onion, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Additional Ingredients:
- 1 1/2 cups extra sharp cheddar cheese
- 1/2 sleeve of Ritz crackers, crushed
- Preheat Oven: Preheat the oven to 350°F.
- Steam Broccoli: Place broccoli in a steaming basket on the stove and steam for 5 minutes until tender.
- Prepare Broccoli Mixture: Chop steamed broccoli into bite-sized pieces and place in a mixing bowl. Add soup, mayonnaise, melted butter, beaten eggs, onion, salt, and pepper. Mix well.
- Add Cheese: Stir in 3/4 cup of cheddar cheese into the broccoli mixture.
- Assemble Casserole: Spray an 8×8 square casserole dish with cooking spray. Transfer the broccoli mixture into the dish.
- Add Toppings: Sprinkle the remaining 3/4 cup of cheese and crushed Ritz crackers on top of the casserole.
- Bake: Bake for 30 minutes or until the cheese is melted and the top is golden.
