Chocolate Coating:

  • 1 cup semi-sweet or milk chocolate chips
  • 1 tablespoon coconut oil or butter (for smooth melting)

Instructions

  1. Make the Peanut Butter Filling: In a medium bowl, mix the peanut butter, softened butter, powdered sugar, and vanilla until smooth and creamy. The mixture should be thick but spreadable.
  2. Assemble the Graham Sandwiches: Break each graham cracker sheet in half to create squares. Spread a layer of the peanut butter mixture (about 1 tablespoon) onto one half, then top with another graham cracker to form a sandwich. Repeat until all are assembled. Place the sandwiches on a parchment-lined tray.
  3. Melt the Chocolate: In a microwave-safe bowl, melt the chocolate chips and coconut oil in 20-second bursts, stirring between each until smooth and fully melted.
