  • ½ cup diced celery (about 1 rib)
  • ½ red bell pepper, seeded and diced
  • 2 teaspoons garlic, minced

Soup

  • 1 teaspoon Cajun seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • 4 cups chicken broth (960 g)
  • 4 large russet potatoes, peeled and cubed
  • ½ cup heavy whipping cream (119 g)
  • 1 cup mild cheddar cheese, shredded (113 g)
  • Parsley, chopped for garnish

Instructions

  1. Cook Sausage: Heat oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
  2. Sauté Vegetables: In the same pot, sauté onion, celery, and bell pepper until softened. Add garlic and cook briefly.
  3. Season and Simmer: Stir in Cajun seasoning, salt, pepper, paprika, and cayenne. Add broth and potatoes. Simmer until potatoes are tender.
  4. Finish Soup: Return sausage to the pot. Stir in cream and cheddar cheese. Simmer until heated through and cheese is melted.
