Instructions

  1. Preheat Oven & Prepare Baking Sheet: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.
  2. Combine Cheeses: In a large mixing bowl, add the shredded mozzarella and grated Parmesan cheese. Mix well using your hands or a fork until thoroughly combined and evenly distributed.
  3. Make the Egg Wash: In a separate medium bowl, whisk the eggs thoroughly. Season the eggs with a pinch of salt and some black pepper to your liking, and whisk again to combine.
  4. Form Cheese Bites: Take about a tablespoon of the cheese mixture and, using your hands, form it into a golf ball-sized ball. Repeat until all the cheese mixture is used.
  5. Bread the Cheese Bites: Dip each cheese ball first into the egg wash, turning to fully coat. Then roll carefully in the panko breadcrumbs, making sure each ball is evenly covered on all sides with crumbs for maximum crunch.
  6. Arrange and Bake: Place each breaded ball on the prepared baking sheet, leaving a little space between each one. Bake for 15–20 minutes, or until the bites are golden brown and set. For a deeper color, you can broil them for the final 1–2 minutes—just watch closely to prevent burning.
  7. Serve: Remove from the oven and let the bites cool for a couple of minutes. Garnish with chopped fresh parsley if desired, and serve warm as an appetizer or snack.
