Ingredients

Scale

Chicken

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Sandwich Components

  • 1 avocado, sliced
  • 4 slices Swiss, cheddar, or provolone cheese
  • 4 slices sourdough, ciabatta, or bread of choice
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced

For Grilling

  • Butter or olive oil for grilling

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat the olive oil in a skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from the skillet and let rest for a few minutes before slicing thinly.
  2. Prepare the Avocado and Cheese: Slice the avocado and prepare the cheese slices. Set them aside for assembly.
  3. Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard evenly on each slice of bread to add flavor and moisture.
  4. Assemble the Sandwiches: On two slices of bread, layer the sliced chicken breasts, avocado slices, and cheese slices. Add a few slices of red onion and tomato on top for extra freshness and crunch. Cover with the remaining two slices of bread, mayo side down.
  5. Grill the Sandwiches: Heat a skillet or grill pan over medium heat and add a bit of butter or olive oil. Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Press down gently with a spatula to ensure even melting of the cheese.
  6. Serve: Remove the sandwiches from the skillet and let rest for a minute before slicing in half. Serve warm for the best taste and texture.

Notes

  • If you prefer, you can substitute mayonnaise with Greek yogurt for a lighter option.
  • Use a toothpick to hold the sandwich together if needed while grilling.
  • For extra flavor, add a pinch of smoked paprika or garlic powder to the chicken seasoning.
  • To make this sandwich gluten free, use gluten free bread.
  • Leftover grilled chicken can be prepared in advance to save time.
