  • ½ teaspoon salt

Wet Ingredients:

  • ½ cup canola oil
  • ⅔ cup granulated sugar
  • 1 large egg, lightly beaten
  • 1 cup zucchini, finely grated
  • 1 cup banana, mashed

  • 1 ½ cup chocolate chips

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350°F and grease an 8″ x 4″ loaf pan.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, cream of tartar, and salt; set aside.
  3. Combine wet ingredients: In the bowl of an electric stand mixer, beat together canola oil and sugar. Add egg and mix. Add zucchini and blend well.
  4. Add dry ingredients: Alternately add the flour mixture and mashed banana to the wet ingredients, mixing gently.
  5. Fold in chocolate chips: Gently fold in the chocolate chips, then pour the batter into the prepared loaf pan.
  6. Bake: Bake for 50-55 minutes, tenting with foil for the last 15 minutes to prevent over-browning.
  7. Cool and serve: Allow the bread to cool before slicing. Serve warm with a pat of butter.
