These Cinnamon Roll Sugar Cookies are a delightful twist on traditional sugar cookies, with a sweet cinnamon sugar filling swirled throughout the dough. Perfect for any occasion or as a special treat!

Cinnamon sugar filling:

  • 4 tablespoons unsalted butter, softened
  • ⅓ cup brown sugar, packed
  • 1½ tablespoons all-purpose flour
  • 2½ teaspoons ground cinnamon
  • pinch salt

Cookies:

  • 1 cup unsalted butter, softened but still cool to the touch
  • 1 ⅓ cups granulated sugar
  • 1 ¾ teaspoons pure vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 ¾ cups all-purpose flour
  • ¾ teaspoon baking powder
  • 1 teaspoon cornstarch
  • ¼ teaspoon salt

Instructions

  1. Cinnamon sugar filling: Mix together all ingredients until well combined. Freeze for 10 minutes.
  2. Cookies: Beat butter and sugar until creamy. Add vanilla, egg, and egg yolk. Combine dry ingredients separately, then add to wet ingredients. Layer dough and cinnamon mixture, fold and mix lightly. Scoop, freeze, then bake at 350°F for 10-12 minutes.
