Cookie Ingredients:
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1/2 cup unsalted sweet cream butter, softened
- 1 cup light brown sugar
- 1 cup smooth peanut butter
- 1 large egg
- 1/2 teaspoon pure vanilla extract
- 1/2 cup sugar to roll the dough in
Peanut Butter Filling:
- 1/4 cup unsalted sweet cream butter, softened
- 1/2 cup smooth peanut butter
- 1 1/2 cups powdered sugar
- 2 Tablespoons whole milk
- 1/4 teaspoon pure vanilla extract
- To make the cookies: Preheat oven to 350°F and line a cookie sheet. Whisk dry ingredients. Cream butter, sugar, and peanut butter. Add egg and vanilla. Combine wet and dry ingredients. Shape dough into balls, roll in sugar, place on sheet, flatten with fork, and bake.
- To make the peanut butter filling: Beat butter until fluffy. Mix in peanut butter, sugar, milk, and vanilla. Spread filling on cookies and sandwich together.
