  • 15.5 oz. black-eyed peas, drained and rinsed
  • 15 oz. sweet corn, drained
  • 1 cup fresh cilantro, chopped
  • ½ cup red bell pepper, diced
  • ½ cup orange bell pepper, diced
  • ½ cup red onion, diced

For the Dressing:

  • 1 tsp. chili powder
  • ½ tsp. kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white wine vinegar
  • 1 tbsp. fresh lime juice
  • ¼ tsp. garlic powder

Instructions

  1. Prepare Ingredients: Drain and rinse black beans, black-eyed peas, and sweet corn. Pat dry.
  2. Mix Ingredients: In a large bowl, combine beans, corn, cilantro, bell peppers, and onion.
