For the Sauce:

  • 4 cloves garlic, minced
  • 1 cup heavy cream (or dairy-free alternative)
  • ½ cup chicken broth (or vegetable broth for a vegetarian option)
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil or unsalted butter
  • 1 tsp Italian seasoning

Additional Ingredients:

  • 1 cup spinach or kale (optional)
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook the Chicken: Heat 1 tbsp of olive oil in a large skillet over medium heat. Season the chicken with salt, pepper, and Italian seasoning. Add to the skillet and cook for 6-7 minutes until golden and cooked through. Remove from skillet and set aside.
  2. Cook the Gnocchi: In the same skillet, add the remaining olive oil and the gnocchi. Cook for 3-4 minutes, stirring occasionally, until golden. Remove and set aside.
  3. Make the Sauce: Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant. Pour in chicken broth, scraping up any browned bits from the skillet. Stir in heavy cream and Parmesan cheese, cooking for 2-3 minutes until the sauce thickens.
  4. Combine Ingredients: Return the chicken and gnocchi to the skillet, tossing to coat everything in the sauce. Stir in spinach (if using) and cook for 1-2 minutes until wilted.
  5. Serve: Taste and adjust seasoning as needed, then serve hot. Garnish with additional Parmesan and fresh herbs if desired.
