For the Chicken:
- 2 tbsp butter
- 2 lbs chicken, cut into thin strips
- 1 tsp sea salt
- 1 tsp ground pepper
For the Sauce:
- 1 white onion, diced
- 2 tbsp garlic, diced
- ½ cup chicken stock
- ½ cup roasted red pepper, drained and sliced
- 1 cup heavy cream
- ½ cup parmesan cheese, shredded
- 1 tbsp Italian seasoning
- ½ cup pepperoncini peppers, drained and sliced
- Melt Butter: In a large, heavy pan, melt butter over medium-high heat.
- Sear Chicken: Season chicken with salt and pepper, then add to the pan. Brown chicken on all sides, turning every couple of minutes for about 8 minutes in total. Remove chicken from the pan.
- Sauté Onion and Garlic: Add garlic and onion to the pan and let brown for about 5 minutes.
- Add Stock and Peppers: Pour in chicken stock and roasted red peppers, allowing the mixture to reduce by half for another 5 minutes.
- Add Cream and Parmesan: Turn off the heat, then slowly stir in the cream and parmesan cheese, whisking vigorously as you incorporate the cream.
- Combine Ingredients: Return the heat to medium-high and add Italian seasoning, pepperoncinis, and the cooked chicken back to the pan. Let the sauce reduce by half, ensuring the chicken reaches 165 degrees Fahrenheit internally. Add more stock if necessary to adjust the sauce consistency as the chicken cooks.
- Finish and Serve: Once the sauce has reduced, remove the skillet from the heat. Serve the creamy pepperoncini chicken over your choice of vegetables, pasta, rice, or enjoy it on its own!

- For a spicier kick, leave the seeds in the pepperoncini peppers.
