  • 1 can (10 ounces) Rotel diced tomatoes with green chilies (including liquid)
  • 1/2 cup water
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Creamy & Cheesy

  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese, plus more for garnish (optional)

  • Salt and black pepper, to taste
  • Chopped fresh herbs, for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of water to a boil over medium-high heat. Add the rotini pasta and cook until al dente, about 8–10 minutes, according to package directions. Drain and set aside.
  2. Brown the Beef: While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the ground beef and break it apart with a spatula. Cook for 6–8 minutes until browned and no longer pink. Drain any excess fat from the skillet.
  3. Add Seasoning and Aromatics: Sprinkle the taco seasoning over the beef. Stir in the water, garlic powder, and onion powder until everything is well combined.
  4. Add Rotel Tomatoes: Pour the entire can of Rotel diced tomatoes with green chilies (including liquid) into the skillet. Stir and bring the mixture to a gentle simmer. Reduce the heat to low and let it cook for 2–3 minutes.
  5. Add Cream & Cheese: Stir in the heavy cream, allowing the sauce to become smooth and creamy. Add the shredded cheddar cheese and mix until the cheese is melted and the sauce is velvety.
  6. Season: Taste the sauce and season with salt and black pepper as desired.
  7. Combine with Pasta: Add the cooked rotini pasta to the skillet. Toss well to coat all the noodles evenly in the creamy beef sauce. Cook for another 2–3 minutes so the pasta can soak up some of the sauce.
  8. Serve: Remove from heat. Serve hot, garnished with extra shredded cheese and chopped fresh herbs if you like.
