  • 1 teaspoon garlic powder
  • ¼ cup Parmesan cheese, freshly grated

  • 12 French baguettes

Instructions

  1. Prepare the Caesar Dressing and Salad: In a bowl, mix together the mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, Parmesan cheese, minced garlic, black pepper, and sea salt until smooth and creamy. Take 4-5 tablespoons of this dressing and toss with the chopped romaine lettuce in a separate bowl. Cover both the salad and the remaining dressing separately and refrigerate until ready to assemble.
  2. Prepare the Chicken Cutlets: Lay the chicken cutlets on a cutting board and, if uneven, gently pound them to an even thickness using a meat mallet or rolling pin. Season both sides with sea salt and ground black pepper.
  3. Set up Breading Station: Prepare three shallow plates: one with flour, salt, and smoked paprika; the second with eggs whisked with salt; and the third with panko crumbs, breadcrumbs, dried parsley, black pepper, sea salt, dried oregano, garlic powder, and grated Parmesan cheese.
  4. Bread the Chicken: Heat oil in a frying pan over medium heat. Dredge each chicken cutlet in the flour mixture and shake off excess, then dip into the egg mixture, and finally press firmly into the breadcrumb mixture ensuring an even coating. Repeat for all cutlets.
  5. Fry the Chicken: Once the oil is hot (test by dropping a few breadcrumbs in—if they sizzle, it’s ready), carefully add the chicken cutlets in batches without overcrowding the pan. Fry for about 4-5 minutes on each side until golden brown, crispy, and fully cooked through. Remove from oil and drain on a wire rack to remove excess oil.
  6. Assemble the Sandwiches: Slice the French baguettes into 12 cm (5 inch) portions and cut each lengthwise. Spread a generous layer of the reserved Caesar dressing on each side. Place a crispy chicken cutlet on the bottom half, top with the dressed romaine lettuce, and sprinkle extra freshly grated Parmesan cheese on top. Close the sandwiches and serve immediately, ideally with fries or your favorite side.
