Ingredients

Scale

Chicken and Seasoning

  • 4 chicken breasts, skin on or skinless
  • 2 tsp Italian seasoning
  • Salt and pepper, to taste

Cooking Base

  • 1 tbsp unsalted butter
  • 1 tsp olive oil (optional)
  • ½ cup (120ml) white wine + ½ cup water OR 1 cup (240ml) chicken broth
  • 4 tbsp diced sun-dried tomatoes, drained
  • 1 tsp sweet paprika
  • 1 tsp garlic granules
  • 1 tsp chicken bouillon (only if using wine)

Sauce

  • 1 cup (225g) sour cream or heavy cream
  • 1 tbsp cornstarch diluted in 2 tbsp cold water (optional)
  • 23 tbsp grated Parmesan cheese
  • 2 tbsp flat leaf parsley or fresh basil, chopped

Instructions

  1. Season the chicken: Pat the chicken breasts dry and season them evenly with salt, pepper, and Italian seasoning for a flavorful base.
  2. Brown the chicken: Heat butter and olive oil in a pan or browning function of the slow cooker. Place chicken breasts skin side down and sear until golden brown to develop flavor and color.
  3. Transfer and add liquids: If you browned in a pan, transfer the chicken to the slow cooker. Pour in white wine mixed with water or chicken broth. Sprinkle paprika, garlic granules, and add sun-dried tomatoes. If you used wine, also add chicken bouillon for extra depth.
  4. Slow cook: Cover and cook on LOW setting for 90 minutes to 2 hours, or until the chicken reaches an internal temperature of 165°F (75°C) and is tender.
  5. Optional thickening: About 10 minutes before cooking is done, stir in the cornstarch slurry if you prefer a thicker sauce. Heat through until sauce thickens. Skip this step if using sour cream as it thickens naturally.
  6. Finish the sauce: Push the chicken to one side of the crock pot. Stir in sour cream or heavy cream until fully incorporated for a creamy texture. Mix in grated Parmesan cheese and chopped parsley or basil to enhance flavor and freshness.
  7. Serve: Plate the chicken alongside your favorite sides like rice, noodles, or mashed potatoes and ladle the creamy sauce over the top for a comforting and delicious meal.

Notes

  • Skin-on chicken adds extra moisture and flavor but skinless works fine for a leaner dish.
  • If you prefer to avoid alcohol, use only chicken broth instead of white wine and water.
  • Cornstarch slurry is optional; sour cream sauce thickens nicely without it.
  • Adjust seasoning at end to taste, adding extra salt or pepper if needed.
  • Leftovers keep well refrigerated for 2-3 days and reheat gently to avoid curdling the cream sauce.
