Instructions

  1. Combine Ingredients in Slow Cooker: Add chicken breasts, diced tomatoes with green chiles, cream of chicken soup, cream of mushroom soup, diced onion, minced garlic, and Italian seasoning into the slow cooker. Cover and cook on high for 3-4 hours or on low for 6-8 hours until chicken is tender and cooked through.
  2. Shred the Chicken: Remove the cooked chicken breasts from the slow cooker and shred them using two forks or a hand/stand mixer. Return the shredded chicken to the crock pot and stir to combine.
  3. Add Cheese and Melt: Stir in the cubed cream cheese and shredded cheddar cheese. Cover and cook on low for an additional 20-30 minutes until the cheeses are melted and fully incorporated into the mixture.
  4. Cook Spaghetti Separately: While cheese is melting, cook spaghetti noodles separately according to package directions until al dente. Drain well.
