  • 46 medium tomatoes (about 2 lbs)
  • 45 small cucumbers (about 1 lb), or 1 English cucumber
  • 1 small onion, thinly sliced (about 1/4 lb)
  • 2 Tbsp sunflower oil or extra virgin olive oil
  • 1 Tbsp distilled white vinegar
  • 1 tsp fine sea salt (or 3/4 tsp table salt)
  • 1/4 tsp freshly ground black pepper (or to taste)
  • 2 Tbsp green onions, for garnish (optional)

Instructions

  1. Prepare the Vegetables: Slice the tomatoes and cucumbers and place them in a large bowl. Thinly slice the onion and add it to the bowl with the tomatoes and cucumbers.
  2. Make the Dressing: In a small ramekin, combine 2 tablespoons of sunflower oil, 1 tablespoon of vinegar, 1 teaspoon of fine sea salt, and 1/4 teaspoon of black pepper. Stir well until the ingredients are fully blended.
  3. Dress the Salad: Just before serving, drizzle the dressing over the salad and toss gently. Taste the salad and add more salt if needed. Avoid adding the dressing too early to prevent the tomatoes from becoming too juicy.
  4. Garnish: Sprinkle with green onions if desired, and serve immediately.
