Bread:

  • 16 slices high-quality soft white sandwich bread, crusts removed

Spread:

  • 1 English cucumber
  • 8 ounces cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 tablespoon minced fresh dill
  • 1 tablespoon minced fresh chives
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon coarse salt
  • Cracked black pepper, to taste

Instructions

  1. Prepare Bread: Remove crusts from 16 slices of white sandwich bread.
  2. Prepare Cucumber: Peel English cucumber in stripes, slice into thin rounds, sprinkle with salt, and pat dry.
  3. Make Spread: Blend cream cheese, mayonnaise, herbs, lemon juice, garlic powder, and salt.
  4. Assemble Sandwiches: Spread herbed cream cheese on bread slices, top with cucumber slices, season with black pepper, and close with more bread slices.
