Ingredients

Scale

Cookie Bars:

  • 1 cup unsalted butter, melted
  • 2 cups light brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup butterscotch chips
  • ¾ cup toffee bits (like Heath bits)
  • Optional: ½ cup chopped pecans, chocolate chips, or crushed pretzels

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the sides for easy lifting. Lightly grease the paper or spray with nonstick spray.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter and brown sugar until smooth and glossy. Add the eggs and vanilla extract, mixing until fully combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually stir the dry ingredients into the wet ingredients, using a rubber spatula or wooden spoon. Mix until just combined—don’t overwork the dough.
  4. Add Mix-Ins: Fold in the butterscotch chips and toffee bits, along with any optional mix-ins like nuts or chocolate chips.
  5. Bake: Spread the dough evenly into the prepared pan and smooth the top with a spatula. Bake for 22–28 minutes, or until the edges are golden brown and a toothpick inserted near the center comes out with a few moist crumbs.
  6. Cool and Serve: Let the bars cool completely in the pan on a wire rack. Use the parchment paper to lift the slab from the pan, then slice into squares.
