Ingredients

Scale

Chicken and Marinade

  • 810 wooden skewers, soaked in water for 30 minutes
  • 1 ½ pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 cups (16 ounces) dill pickle juice

Seasoning

  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika

Dressings and Garnish

  • 1 cup dill pickle ranch dressing, divided (plus more for dipping)
  • Fresh dill, chopped for garnish

Instructions

  1. Marinate chicken in pickle juice: Place the cubed chicken breasts in a large bowl and pour in the dill pickle juice. Cover the bowl and refrigerate overnight or for at least 8 hours to thoroughly infuse the chicken with tangy pickle flavor.
  2. Season marinated chicken: In a separate bowl, whisk together kosher salt, black pepper, garlic powder, onion powder, and paprika. Remove the chicken from the marinade and toss it with the seasoning mix until evenly coated.
  3. Thread chicken onto skewers: Drain the chicken pieces and carefully thread them onto the soaked wooden skewers, distributing the pieces evenly.
  4. Brush chicken with dill pickle ranch dressing: Add ½ cup of the dill pickle ranch dressing to a small bowl and brush it generously over the chicken skewers. Reserve the remaining dressing for later use.
  5. Preheat air fryer: Preheat your air fryer to 400°F (204°C). Lightly spray the air fryer basket with nonstick spray to prevent sticking.
  6. Add skewers to air fryer basket: Place the chicken skewers in a single layer inside the air fryer basket. If necessary, cook in batches depending on the size of your air fryer.
  7. Air fry chicken skewers: Cook the skewers for 11-12 minutes, flipping them halfway through cooking for even browning. The chicken is done when it reaches an internal temperature of 165°F (74°C).
  8. Brush cooked chicken with reserved dressing: Remove the cooked skewers and generously brush them with the remaining dill pickle ranch dressing. Serve any extra dressing on the side for dipping.
  9. Garnish and serve: Sprinkle chopped fresh dill over the skewers for an aromatic finish. Serve immediately alongside extra dill pickle ranch dressing.

Notes

  • Soaking the wooden skewers prevents them from burning in the air fryer.
  • Marinating the chicken overnight enhances the pickle flavor and tenderizes the meat.
  • Make sure not to overcrowd the skewers in the air fryer basket to ensure even cooking.
  • Use a meat thermometer to confirm the chicken has reached a safe internal temperature of 165°F.
  • Leftover skewers can be refrigerated for up to 3 days and reheated gently in the air fryer or oven.
