Truffle Base
- 1 (9 ounce) bag Iced Circus Animal Cookies
- 6 ounces cream cheese
Coating and Decoration
- 18 ounces white chocolate almond bark
- Pink food coloring (optional)
- Additional 3 Circus Animal Cookies for garnishing, crushed
- Crush Cookies: In a food processor, crush all but about 3 of the Iced Circus Animal Cookies until they become fine crumbs. Reserve the remaining cookies to use later as garnish.
- Mix with Cream Cheese: Add the cream cheese to the cookie crumbs and mix well until a soft, sticky dough forms.
- Form Truffle Balls: Using a one-tablespoon cookie scoop, portion the dough into small balls and place them on a baking sheet lined with parchment paper for easy handling.
- Chill Truffles: Refrigerate the truffle balls for at least 30 minutes to firm up.
- Melt White Chocolate: Using a melting pot or microwave, melt 16 ounces of the white chocolate almond bark in 30-second increments until smooth. Keep the truffles chilled in the refrigerator while melting the chocolate.
- Dip Truffles: Dip each chilled truffle completely into the melted white chocolate and place them back on the parchment paper to harden.
- Color and Drizzle: Melt the remaining 2 ounces of almond bark and stir in 6-8 drops of pink food coloring. Drizzle this pink chocolate over the hardened truffles.
- Garnish: Sprinkle the crushed reserved Circus Animal Cookies over the pink drizzle before the chocolate sets to finish decoration.
