Ingredients

Scale

Truffle Base

  • 1 (9 ounce) bag Iced Circus Animal Cookies
  • 6 ounces cream cheese

Coating and Decoration

  • 18 ounces white chocolate almond bark
  • Pink food coloring (optional)
  • Additional 3 Circus Animal Cookies for garnishing, crushed

Instructions

  1. Crush Cookies: In a food processor, crush all but about 3 of the Iced Circus Animal Cookies until they become fine crumbs. Reserve the remaining cookies to use later as garnish.
  2. Mix with Cream Cheese: Add the cream cheese to the cookie crumbs and mix well until a soft, sticky dough forms.
  3. Form Truffle Balls: Using a one-tablespoon cookie scoop, portion the dough into small balls and place them on a baking sheet lined with parchment paper for easy handling.
  4. Chill Truffles: Refrigerate the truffle balls for at least 30 minutes to firm up.
  5. Melt White Chocolate: Using a melting pot or microwave, melt 16 ounces of the white chocolate almond bark in 30-second increments until smooth. Keep the truffles chilled in the refrigerator while melting the chocolate.
  6. Dip Truffles: Dip each chilled truffle completely into the melted white chocolate and place them back on the parchment paper to harden.
  7. Color and Drizzle: Melt the remaining 2 ounces of almond bark and stir in 6-8 drops of pink food coloring. Drizzle this pink chocolate over the hardened truffles.
  8. Garnish: Sprinkle the crushed reserved Circus Animal Cookies over the pink drizzle before the chocolate sets to finish decoration.

Notes

  • If you don’t have a food processor, place the cookies in a sealed plastic bag and crush them with a rolling pin.
  • The cream cheese should be softened for easier mixing.
  • Use parchment paper to prevent the truffles from sticking to the tray.
  • Adjust the amount of pink food coloring according to desired intensity of color.
  • Store the truffles in an airtight container in the refrigerator and consume within a week for best freshness.
