Brownie Batter

  • 1 box Ghirardelli brownie mix (1820 oz)
  • ¼ cup water
  • ¼ cup to ½ cup vegetable oil (check box instructions)
  • 1 large egg

  • ½ cup semisweet or dark chocolate chips
  • 1 ¼ cups mini marshmallows

Instructions

  1. Prepare Pan: Line an 8×8-inch baking pan with foil and spray with nonstick cooking spray to prevent sticking.
  2. Arrange Graham Crackers: Place 4 whole graham crackers in a single layer along the bottom of the pan. Break the fifth graham cracker along perforated lines as needed to fill any gaps and complete the base evenly.
  3. Make Brownie Batter: Follow the directions on the Ghirardelli brownie mix box, mixing together the brownie mix, water, vegetable oil, and egg until combined.
  4. Pour Batter: Spread the prepared brownie batter evenly over the layer of graham crackers to cover them completely.
  5. Bake First Layer: Bake the pan in a preheated oven at 325°F (163°C) for 35 minutes until the brownie layer is set but not fully browned.
  6. Add Toppings: Immediately remove the pan from the oven and sprinkle ½ cup of semisweet or dark chocolate chips evenly across the brownie layer. Then, sprinkle 1 ¼ cups of mini marshmallows on top of the chocolate chips.
  7. Bake Again: Return the pan to the oven and bake for an additional 5 minutes, or until the marshmallows puff up and develop a light golden brown color.
  8. Cool and Serve: Remove from the oven and allow the brownies to cool for about 20 minutes. This lets the topping set slightly for easier slicing. Cut into squares and enjoy warm or at room temperature.
