Ingredients

Scale

Firecracker Beef:

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 4 cloves garlic, minced
  • 2 green onions, minced (white parts only)
  • 1/4 teaspoon red pepper flakes
  • 3 tablespoons sriracha
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey

Bowls:

  • 1 1/2 cups dry rice
  • 4 cups broccoli florets
  • 1 cup shredded carrots
  • 1 tablespoon olive oil
  • 2 green onions, thinly sliced (green parts only)
  • 1/2 teaspoon sesame seeds

Instructions

  1. Cook the rice: In a pot, combine the rice with 3 cups of water and a pinch of salt. Bring to a boil, then reduce heat to a simmer, cover, and cook for 15 minutes or according to package instructions until rice is tender and fluffy.
  2. Make the firecracker sauce: In a small bowl, whisk together sriracha, soy sauce, rice vinegar, and honey. Set aside.
  3. Cook the beef: Heat olive oil in a large pan or cast-iron skillet over medium-high heat. Add ground beef and cook, breaking apart with a spatula, for 4-5 minutes until mostly cooked through.
  4. Add aromatics and sauce: Stir in minced garlic, minced white parts of green onions, and red pepper flakes. Cook for 1-2 minutes until fragrant. Pour in the firecracker sauce, combine well, and cook for another 3-4 minutes until the sauce thickens and the beef develops slight crispiness. Remove from heat.
  5. Sauté vegetables: In a separate small pan, heat 1 tablespoon olive oil. Add broccoli florets and sauté for 2-3 minutes until tender. Add shredded carrots and cook for an additional 1-2 minutes until all vegetables are tender. Remove from heat.
  6. Assemble bowls: Divide cooked rice evenly among 4 airtight containers. Top each with a quarter of the firecracker beef and a quarter of the sautéed broccoli and carrots. Garnish with sliced green parts of green onions and sprinkle with sesame seeds.
  7. Storage and serving: Serve immediately or store in the refrigerator for up to 4 days. These bowls can also be frozen for up to 3 months for convenient meal prep.

Notes

  • Use white or brown rice depending on your preference; adjust cooking time accordingly.
  • Adjust the amount of red pepper flakes and sriracha to control the spice level.
  • For a gluten-free option, use tamari in place of soy sauce.
  • Ensure the containers are airtight to maintain freshness if storing in the fridge or freezer.
  • Reheat frozen bowls by thawing overnight in the refrigerator and warming thoroughly before eating.
