Fried Strawberry Cheesecake Sandwiches are a delightful twist on classic French toast. Creamy, sweetened cream cheese, fresh strawberries, and luscious strawberry jam are layered between slices of pillowy brioche, dipped in an egg custard, and pan-fried until golden brown. Finished with a dusting of powdered sugar, these sandwiches are crisp on the outside, soft and creamy inside, and bursting with rich strawberry flavor. Perfect for a decadent breakfast, brunch, or a dessert-inspired snack.

Ingredients

Scale

Bread and Filling

  • 8 slices brioche or challah bread
  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar (plus more for dusting)
  • 1/2 cup fresh strawberries, sliced
  • 1/4 cup strawberry jam

Custard Mixture

  • 2 large eggs
  • 3 tbsp milk

For Frying

  • 2 tbsp butter (for frying)

Instructions

  1. Make the Cream Cheese Filling: In a small bowl, combine the softened cream cheese and powdered sugar. Mix until the mixture is smooth and creamy, without any lumps.
  2. Assemble the Sandwiches: Spread the cream cheese mixture generously onto one side of four bread slices. Top this layer with sliced fresh strawberries and spoonfuls of strawberry jam. Cover each sandwich with one of the remaining bread slices to create four sandwiches.
  3. Prepare the Custard Mixture: In a shallow dish, whisk together the eggs and milk until fully combined and slightly frothy. This will create a custardy coating for your sandwiches.
  4. Dip the Sandwiches: Working one at a time, dip each assembled sandwich into the egg-milk mixture. Be sure to coat both sides thoroughly, letting the bread soak in the custard for a moment, but not so long that it becomes soggy.
  5. Fry the Sandwiches: Heat 1 tablespoon of butter in a large skillet over medium heat. Once the butter is melted and sizzling, add the sandwiches (as many as will fit in a single layer) and cook for 2–3 minutes per side until golden brown and crisp. Add more butter as needed for the next batch.
  6. Finish and Serve: Remove the fried sandwiches from the skillet and let them drain briefly on a paper towel-lined plate. Dust generously with powdered sugar before slicing and serving warm.

Notes

  • Use slightly stale bread for better structure and to prevent sogginess.
  • Swap in raspberries or blueberries for a fun flavor twist.
  • Make sure cream cheese is softened—cold cream cheese will not mix smoothly.
  • You can substitute regular bread, but brioche or challah offers the best texture and flavor.
  • Serve immediately for maximum crispness and creamy contrast.
