Ingredients

Scale

Beef and Potatoes

  • 1.5 pounds Beef stew meat, cut into bite-sized pieces
  • 1 pound Baby potatoes, halved

Garlic Butter Sauce

  • 4 tablespoons Unsalted butter, melted
  • 3 cloves Garlic, minced
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Dried thyme
  • 0.5 teaspoon Dried rosemary
  • 0.5 teaspoon Salt, or to taste
  • 0.25 teaspoon Black pepper

Additional Ingredients

  • 0.25 cup Beef broth
  • 1 tablespoon Olive oil

Instructions

  1. Prepare Ingredients: Gather all ingredients. Cut the beef stew meat into bite-sized pieces and halve the baby potatoes for even cooking. Optionally, parboil the potatoes for a few minutes to soften slightly, which helps them cook evenly in the slow cooker.
  2. Sear Beef: Heat the olive oil in a skillet over medium-high heat. Add the beef bites and sear them until browned on all sides, which locks in the flavor and adds depth to the dish.
  3. Make Garlic Butter Sauce: In a small mixing bowl, combine the melted unsalted butter, minced garlic, onion powder, smoked paprika, dried thyme, dried rosemary, salt, and black pepper. Stir well to blend all flavors into a rich garlic butter sauce.
  4. Assemble in Slow Cooker: Place the halved baby potatoes at the bottom of the slow cooker. Add the seared beef bites on top. Pour the prepared garlic butter sauce evenly over the beef and potatoes, then add the beef broth for moisture.
  5. Cook: Cover the slow cooker and cook on low heat for 6-8 hours or on high heat for 3-4 hours. The beef should become fork-tender and the potatoes thoroughly cooked through.
  6. Rest and Serve: Once cooked, let the dish rest in the slow cooker for about 10 minutes before serving to allow the flavors to meld and the juices to redistribute.

Notes

  • Parboiling the potatoes is optional but recommended for even cooking and better texture.
  • Searing the beef first enhances flavor through caramelization.
  • You can adjust the seasoning according to taste, adding more garlic or spices if desired.
  • For a thicker sauce, remove the lid during the last 30 minutes of cooking to reduce excess liquid.
  • This recipe works well with other cuts of beef or small potatoes if preferred.
