Instructions

  1. Cook the Potatoes: Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the halved or quartered baby potatoes, sprinkle with salt, pepper, and paprika. Sauté, stirring occasionally, until the potatoes are golden brown and fork-tender, about 15 minutes. Transfer the potatoes to a plate and set aside.
  2. Season the Steak: While the potatoes cook, season the steak cubes generously with salt, black pepper, and dried Italian herbs, tossing to coat evenly.
  3. Sear the Steak: In the same skillet, add 1 tablespoon olive oil and 2 tablespoons butter over medium-high heat. Once the butter melts, add the steak cubes in a single layer (work in batches if needed for a good sear). Cook for 2–3 minutes on each side until the steak is browned but still juicy inside. Don’t overcrowd or overcook.
  4. Add Garlic Butter: Reduce the heat to medium-low. Add the remaining 2 tablespoons butter and stir in the minced garlic. Sauté for about 1 minute, stirring constantly, until the garlic is very fragrant.
