Pasta:
- 16 ounces rigatoni pasta or penne
Sauce:
- 1/2 cup extra virgin olive oil
- 1 tablespoon fresh garlic, finely minced
- 2/3 cup tomato paste
- 1 1/3 cup heavy cream
- 2 teaspoons red pepper flakes, or to taste
- 2 teaspoons dried basil
- Salt and pepper to taste
- 1/2 cup freshly grated parmesan, plus more to taste
- 2 tablespoons unsalted butter
- Pasta water
Optional Garnishes:
- Finely chopped parsley
- Red pepper flakes
- Cook Pasta: Boil salted water, cook pasta according to package instructions, reserve 1 cup of pasta water, drain.
- Prepare Sauce: In a saucepan, sauté garlic and tomato paste in olive oil until darkened. Add heavy cream, simmer. Season with red pepper flakes, basil, salt, and pepper.
- Finish Sauce: Stir in parmesan, butter, and pasta water until creamy.
- Combine: Toss cooked pasta in the sauce until coated.
- Serve: Garnish with additional parmesan, parsley, and red pepper flakes if desired.
Notes
- This dish can be customized with your favorite protein or vegetables.
- Adjust the spice level by adding more or less red pepper flakes.
- For a lighter version, you can use half-and-half instead of heavy cream.
