Cinnamon Sugar Swirl

  • 2 oz (55 g) butter, softened at room temperature
  • 2 oz (55 g) granulated sugar
  • 2 tsp (4 g) ground cinnamon
  • 1 Tbsp pancake batter

Cinnamon Butter

  • 4 oz (115 g) butter, softened at room temperature
  • 2.12 oz (60 g) powdered sugar
  • 1 1/2 tsp (3 g) ground cinnamon
  • 1.41 oz (40 g) honey
  • 1/2 tsp (2.5 g) vanilla bean paste
  • 1/16 tsp (0.38 g) sea salt

Instructions

  1. Prepare the Pancake Batter: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, sugar, ground cinnamon, and pumpkin pie spice. Create a well in the center and add the egg, milk, pumpkin purée, vegetable oil, and vanilla bean paste. Stir gently until just combined; avoid overmixing to ensure the pancakes remain fluffy. Set the batter aside.
