Ground Beef Mixture
- 1 pound lean ground beef
- 1/2 teaspoon garlic powder
- Kosher salt and freshly ground black pepper to taste
- 1/3 cup thinly sliced green onions
- 2 tablespoons low sodium soy sauce
- 1 teaspoon sriracha (optional)
Brussels Sprouts
- 1 tablespoon avocado oil
- 1 pound shredded Brussels sprouts
- Kosher salt and freshly ground black pepper to taste
Sauce and Garnish
- 1/2 cup sweet chili sauce
- Juice of 1/2 lime
- Sesame seeds for garnish (optional)
- Cook the Ground Beef and Onions: Add the ground beef to a large skillet and crumble it. Stir in the green onions, seasoning with kosher salt, freshly ground black pepper, garlic powder, sriracha (if using), and low sodium soy sauce. Cook over medium heat until the beef is browned and cooked through, then transfer it to a plate and set aside.
- Saute the Brussels Sprouts: In the same skillet, add one tablespoon of avocado oil. Toss in the shredded Brussels sprouts and season with kosher salt and freshly ground black pepper. Saute them over medium heat until they are soft and caramelized, approximately 8-10 minutes.
- Combine Beef and Brussels Sprouts: Return the cooked ground beef to the skillet with the Brussels sprouts. Pour in the sweet chili sauce and lime juice, stirring everything together until the beef and sprouts are well coated with the sauce and heated through.
- Garnish and Serve: Sprinkle sesame seeds on top if desired. Serve hot over rice or your preferred side dish for a complete meal.
Notes
- For a spicier dish, increase the amount of sriracha or add a pinch of red pepper flakes.
- Shredding Brussels sprouts finely helps them cook faster and develop more caramelization.
- This recipe can be made gluten-free by ensuring the soy sauce is tamari or a gluten-free brand.
- Serve over cauliflower rice or noodles for a low-carb option.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
