Ingredients

Scale

Sweet Potatoes

  • 2 medium sweet potatoes, peeled and diced
  • 2 tbsp olive oil (divided)
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • 1/2 tsp salt
  • Pinch of black pepper

Ground Beef Mixture

  • 1 lb lean ground beef (93% lean preferred)
  • 1 yellow onion, diced
  • 1 taco seasoning packet or 2 tbsp homemade taco seasoning (chili powder, cumin, garlic powder, smoked paprika, salt)
  • 1 tbsp olive oil
  • Splash of water

Toppings and Garnish

  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 avocado, sliced
  • 2 tbsp hot honey (store-bought or homemade)
  • Optional: chopped cilantro, sliced green onion, red pepper flakes, lime wedge

Instructions

  1. Roast the Sweet Potatoes: Preheat your oven to 400°F (204°C). Peel and dice the sweet potatoes into small, even cubes for crisp edges and tender centers. Toss them with 1 tablespoon olive oil, smoked paprika, garlic powder, cinnamon, salt, and black pepper. Spread evenly on a baking sheet and roast for 40 to 45 minutes, flipping halfway to ensure they caramelize and crisp up beautifully.
  2. Cook the Ground Beef: Heat the remaining 1 tablespoon olive oil in a skillet over medium heat. Add the diced yellow onion and cook for 5 to 7 minutes until translucent and softened, releasing natural sweetness. Add the ground beef, breaking it apart with a spatula, and cook until no longer pink and well browned. Sprinkle in the taco seasoning, add a splash of water, and simmer until the seasoning thickens and coats the meat evenly.
  3. Assemble the Bowls: In each serving bowl, layer a generous scoop of roasted sweet potatoes followed by a portion of seasoned ground beef. Add 1/4 to 1/2 cup cottage cheese, then top with fresh avocado slices.
  4. Add Hot Honey and Garnish: Drizzle 2 tablespoons of hot honey over each bowl to add a spicy-sweet kick. Garnish with optional chopped cilantro, sliced green onions, red pepper flakes, or a wedge of lime for added freshness and flavor complexity.

Notes

  • For a homemade taco seasoning, mix chili powder, cumin, garlic powder, smoked paprika, and salt to taste.
  • Adjust hot honey quantity based on your preferred spice level.
  • Use low-fat or full-fat cottage cheese depending on dietary preference.
  • Roasting sweet potatoes in even-sized cubes ensures even cooking and the best texture.
  • Leftover roasted sweet potatoes and ground beef can be refrigerated for up to 3 days.
  • Swap ground beef for ground turkey or plant-based meat for alternative protein options.
