Zucchini:

  • 2 medium zucchini, sliced about 2 pounds

Ground Beef Mixture:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 pound lean ground beef
  • 2 teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 28 ounce can diced tomatoes, drained
  • 2 cups shredded mozzarella cheese

Instructions

  1. Prepare Zucchini: Slice zucchini into ½” rounds. Salt the rounds and allow them to sit for 15 minutes. Rinse well and pat dry.
  2. Cook Ground Beef Mixture: Heat oil in a skillet, sauté onions, add garlic and ground beef. Cook until browned. Stir in tomatoes, Italian seasoning, salt, and pepper.
  3. Assemble Casserole: Preheat oven. In a baking dish, layer half of the meat mixture, zucchini slices, and mozzarella cheese. Repeat layers.
  4. Bake: Bake at 350°F for 20-25 minutes until cheese is melted and browned.
  5. Rest and Serve: Let the casserole rest for 10 minutes before serving.
