Ground Turkey Mixture
- 1 lb ground turkey
- 1 Tbsp sesame oil (or favorite cooking oil)
- 2–3 garlic cloves, minced
- 2 tsp grated ginger
- ½ tsp smoked paprika
- ½ tsp onion powder
- 3 Tbsp low sodium soy sauce
- 1–2 Tbsp sriracha
- 2–3 Tbsp chicken broth
- 2 tsp honey
- ½ tsp black pepper
- ½ tsp sea salt (adjust to taste)
- 2 tsp corn starch
Bang Bang Sauce
- ½ cup mayonnaise
- 3 Tbsp sweet chili sauce
- ½–1 Tbsp sriracha (adjust for spice preference)
- 1 tsp rice vinegar
- 2 tsp honey
Rice Bowl Options
- Cooked rice
- Shredded carrots
- Sliced cucumbers
- Shelled edamame
- Pickled onions
- Avocado slices
- Shredded cabbage
- Sliced green onion
- Sesame seeds
- Prep Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until smooth and well combined. Taste and adjust the spice or sweetness by adding more sriracha or honey/sweet chili sauce as desired. Chill the sauce until ready to serve.
- Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat. Once the oil is hot and shimmering, add the ground turkey, breaking it into smaller pieces with a spoon. Cook until browned and no longer pink, reaching an internal temperature of 165°F.
- Season and Simmer: Reduce heat to medium-low. Stir in minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Let the mixture simmer for 2-3 minutes, stirring occasionally to allow flavors to meld.
- Thicken the Mixture: Sprinkle corn starch evenly over the turkey mixture and stir well to combine. This will thicken the sauce. Optionally, stir in about 2 tablespoons of the prepared bang bang sauce into the turkey mixture just before serving to enhance the flavor.
- Assemble the Rice Bowls: In bowls, layer cooked rice and your choice of vegetables such as shredded carrots, sliced cucumbers, shelled edamame, pickled onions, avocado, and shredded cabbage. Spoon the warm ground turkey mixture over the rice and vegetables. Drizzle additional bang bang sauce on top, and garnish with sliced green onions and sesame seeds for added flavor and texture.
Notes
- Adjust the spiciness of both the turkey mixture and bang bang sauce by adding more or less sriracha according to your taste.
- For a gluten-free version, use gluten-free soy sauce or tamari.
- The dish can be served warm or at room temperature, perfect for meal prep.
- Add crunchy toppings like chopped peanuts or crispy wonton strips for extra texture.
- Use brown rice or cauliflower rice as a healthier alternative to white rice.
