Ingredients

Scale

Protein and Cooking Base

  • 450g (1 lb) lean ground turkey
  • 1 tablespoon olive oil

Vegetables

  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 medium bell peppers, thinly sliced
  • 2 cups (200g) broccoli florets
  • 1 cup (100g) carrots, thinly sliced
  • ½ cup green onions, sliced (for garnish)

Homemade Teriyaki Sauce

  • ¼ cup (60ml) low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (cornstarch slurry)

Instructions

  1. Make the Teriyaki Sauce: In a mixing bowl, whisk together the low-sodium soy sauce, honey, rice vinegar, and cornstarch slurry until well combined. Set aside to use later.
  2. Cook the Ground Turkey: Heat olive oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook for 5 to 7 minutes, using a wooden spoon to break it apart until browned and fully cooked through.
  3. Add Garlic and Ginger: Stir in the minced garlic and grated ginger with the cooked turkey. Cook for 1 to 2 minutes until fragrant, making sure not to burn the garlic.
  4. Add Vegetables: Add the sliced bell peppers, broccoli florets, and carrots to the skillet. Stir everything together and cook for 5 to 7 minutes more, until the vegetables are tender but still crisp.
  5. Add the Teriyaki Sauce: Pour the prepared teriyaki sauce over the turkey and vegetables. Stir well to coat evenly and let it simmer for 2 to 3 minutes until the sauce thickens slightly and clings to the ingredients.
  6. Finish and Serve: Remove the skillet from heat. Garnish with the sliced green onions and serve hot over your choice of rice, quinoa, or noodles to complete the meal.

Notes

  • Use lean ground turkey for a healthier, lower-fat option.
  • Adjust the amount of honey if you prefer a sweeter or less sweet sauce.
  • Feel free to substitute or add other vegetables such as snap peas, mushrooms, or baby corn.
  • Serve immediately for the best texture and flavor, as leftovers may get soggy.
  • For a gluten-free version, replace soy sauce with tamari.
