These Guacamole Stuffed Eggs are a delightful twist on classic deviled eggs. Creamy avocado mixed with zesty lime juice, cilantro, and spices, stuffed into egg whites and garnished with smoked paprika – a perfect appetizer or snack for any occasion.

For the Eggs:

  • 6 large boiled eggs

For the Guacamole Mixture:

  • 1 medium ripe avocado
  • 1 tablespoon fresh lime juice (juice of 1/2 lime)
  • Freshly ground black pepper to taste
  • 1/4 teaspoon onion powder
  • 1 clove garlic, pressed
  • 1 tablespoon finely chopped cilantro leaves, plus more for garnish
  • 1/8 teaspoon salt (or to taste)

For Garnish:

  • Smoked paprika for garnish

Instructions

  1. Prepare the Eggs: Peel the boiled eggs and cut them in half lengthwise. Carefully remove the yolks from the egg whites and place three of the yolks in a small bowl. Discard the remaining yolks.
  2. Mash the Avocado Mixture: Add the ripe avocado, lime juice, and chopped cilantro to the bowl with the yolks. Sprinkle in the onion powder and freshly ground black pepper. Press in the garlic clove. Mash everything together using a potato masher or a fork until smooth.
  3. Season the Mixture: Add 1/8 teaspoon of salt (or to taste) and mix until the ingredients are fully combined.
  4. Fill the Eggs: Use a pastry bag fitted with a star tip (or a ziplock bag with a corner cut off) to pipe the avocado mixture into the hollowed egg whites, creating a smooth and even finish.
  5. Garnish and Serve: Sprinkle smoked paprika over the top for a pop of color and added flavor. Garnish with extra cilantro leaves if desired. Serve immediately or chill before serving.
