Dried Basil:

Red Pepper Flakes:

All-Purpose Flour:

3 tablespoons

Low-Sodium Chicken Broth:

4 cups

Yukon Gold Potatoes:

1½ lbs, chopped

Heavy Cream:

⅔ cup, at room temperature

Kosher Salt:

Instructions

  1. Brown the Sausage: In a large Dutch oven or heavy-bottomed pot over medium heat, brown the Italian sausage. Add the chopped onion, celery, and carrots halfway through and cook until sausage is browned and vegetables are softened.
  2. Add Butter and Aromatics: Add butter to make 3 tablespoons of fat in the pot. Stir in garlic, marjoram, thyme, basil, and red pepper flakes. Sauté until fragrant.
  3. Thicken with Flour: Sprinkle flour over the mixture and cook for 1–2 minutes to absorb the fat.
  4. Add Broth and Potatoes: Gradually pour in chicken broth, stirring to prevent lumps. Add potatoes and simmer until tender, about 15–20 minutes.
  5. Finish with Cream: Remove from heat and stir in heavy cream until blended.
  6. Season and Serve: Season with salt and pepper, ladle into bowls, and top with desired toppings.
