Turkey Filling

  • 1 tablespoon olive oil
  • 2 cloves garlic, finely chopped

  • 1 teaspoon chili powder

  • 1 cup diced canned tomatoes (with their juice)
  • 1 medium zucchini, grated
  • A large handful of spinach, chopped
  • 1 cup black beans, rinsed and drained (optional)
  • 1 cup corn kernels, usually frozen (optional)

Instructions

  1. Cook the Sweet Potatoes: Pierce each sweet potato several times with a fork. For the microwave method, cook each potato for about 3 minutes per side or until soft, allowing cooling afterwards. Alternatively, bake in a preheated 425ºF oven on a foil-lined baking sheet for 45 to 50 minutes until tender, then cool.
  2. Prepare the Sweet Potato Filling: Slice cooled sweet potatoes lengthwise and gently scoop out the flesh, keeping the skins intact. Mash the flesh with a fork or masher, then stir in olive oil and ground cumin, seasoning with salt and pepper to taste.
  3. Cook the Turkey Mixture: Heat olive oil in a large pan over medium-high heat. Cook the garlic until fragrant, then add ground turkey. Brown the meat thoroughly. Stir in ground cumin, paprika, oregano, chili powder, salt, and pepper. Add diced tomatoes, black beans, corn, grated zucchini, and spinach, cooking until heated through and well combined.
  4. Assemble the Stuffed Potatoes: Place empty sweet potato skins on a baking sheet. Evenly distribute the mashed sweet potato mixture back into the skins. Top each with a generous amount of the turkey and vegetable mixture. Sprinkle grated cheddar cheese on top. Optionally, bake the assembled potatoes briefly to melt the cheese before serving.
  5. Serve: Garnish with finely sliced green onions. Serve stuffed sweet potatoes with salsa and plain Greek yogurt on the side for extra flavor and creaminess.
