Chicken Wings
- 2 pounds chicken wings
- 3 tablespoons potato starch
- 1 tablespoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ¼ teaspoon paprika
- Oil spray, as needed
Honey Lemon Pepper Sauce
- ½ cup honey
- 1 lemon, zested
- ¼ cup lemon juice, or more to taste
- 1 tablespoon minced garlic
- 1 tablespoon butter
- 1–2 teaspoons ground black pepper
- 1 pinch salt
- Prepare the Wings: Preheat your oven to 450°F (232°C). Pat the chicken wings dry using paper towels to ensure they crisp up properly during baking.
- Coat the Wings: In a large bowl, combine the potato starch, baking powder, garlic powder, onion powder, and paprika. Toss the wings in this mixture until they are evenly coated.
- Arrange for Baking: Lightly spray a parchment-lined baking sheet with oil. Arrange the coated wings in a single layer on the sheet, then spray the tops lightly with oil to encourage crispiness.
- Bake the Wings: Reduce the oven temperature to 425°F (218°C). Bake the wings for 35 to 40 minutes, flipping them halfway through and spraying more oil on top after flipping, until they are golden brown and crispy.
- Make the Sauce: While the wings bake, combine honey, lemon juice, lemon zest, minced garlic, butter, salt, and ground pepper in a small saucepan over medium heat. Stir and simmer for 3 to 5 minutes until well combined and fragrant. Reserve a small portion for dipping if desired.
- Toss Wings in Sauce: Once the wings are finished baking, transfer them to a large bowl. Pour the warm honey lemon pepper sauce over the wings and toss until they are thoroughly coated.
- Serve: Serve immediately with the reserved dipping sauce on the side for extra flavor.
Notes
- Patting the wings dry before coating is essential for crispiness.
- Baking powder helps achieve a crunchy texture without frying.
- You can adjust the amount of black pepper to your preferred level of spiciness.
- Reserve some sauce for dipping to add extra flavor with each bite.
- These wings are best served fresh but can be reheated in the oven to maintain crispiness.
