  • Optional: 2 teaspoons fresh orange zest

  1. Prepare the Ricotta: Place the ricotta cheese into a fine-mesh strainer set over a bowl. Refrigerate and allow it to drain for at least 6 hours or up to 24 hours. This step ensures a thick and creamy filling.
  2. Make the Filling: In a large mixing bowl, combine the drained ricotta cheese, confectioners’ sugar, ¼ cup of the mini chocolate chips, vanilla extract, and orange zest (if using). Mix until well incorporated.
  3. Prepare for Piping: Transfer the filling to a pastry bag fitted with a ½-inch open tip. If you don’t have a pastry bag, use a resealable plastic bag with a corner snipped off. You can use the filling immediately or refrigerate it for up to 24 hours.
  4. Fill the Cannoli Shells: When ready to serve, pipe the filling into one end of a cannoli shell until halfway filled, then pipe into the other end. Repeat this process with the remaining shells.
