Ingredients

Scale

Chicken

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Sandwich Fillings

  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced

Bread & Spreads

  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard

For Grilling

  • Butter or olive oil for grilling

Instructions

  1. Season and Cook Chicken: Season the chicken breasts evenly with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the chicken breasts for 6 to 7 minutes on each side, or until fully cooked and no longer pink inside. Remove from heat and let the chicken rest for a few minutes before slicing thinly.
  2. Prepare Vegetables and Cheese: While the chicken rests, slice the avocado, thinly slice the red onion, and slice the tomato. Arrange the cheese slices and set them aside for assembling the sandwich.
  3. Spread the Bread: Mix the mayonnaise and Dijon mustard. Spread this mixture evenly on each slice of bread on one side.
  4. Assemble the Sandwich: On two slices of the prepared bread, layer the sliced chicken, avocado, cheese, red onion, and tomato. Then top with the remaining slices of bread, mayo side down to complete the sandwich.
  5. Grill the Sandwich: Heat a skillet or grill pan over medium heat. Add a small amount of butter or olive oil to the pan. Place the sandwiches in the pan, pressing gently with a spatula to ensure good contact. Cook each side for 3 to 4 minutes, or until the bread is golden brown and the cheese has melted.
  6. Serve: Remove the sandwiches from the skillet and allow them to cool for about one minute. Then slice them in half and serve warm for the best flavor and texture.

Notes

  • You can use any type of cheese you prefer, such as Swiss, cheddar, or provolone, depending on your flavor preference.
  • Choosing sturdy bread like sourdough or ciabatta helps to hold all the fillings without becoming soggy.
  • For a spicier kick, add a few slices of jalapeño or a dash of hot sauce before grilling.
  • Make sure to let the cooked chicken rest before slicing to keep it juicy.
  • This sandwich can be made ahead and wrapped to grill later, making it convenient for meal prep.
